Your pan will not match ours
Two cooks can follow one recipe and still smell something different coming off the stove. Burner strength, the thickness of a pan, the brand of flour, the height above sea level and plain practice all nudge the result. Read the times and amounts as a sturdy starting point, then trust your eyes, ears and nose.
The safety part belongs to whoever is cooking
Where a dish calls for raw meat, poultry, eggs, dairy or a pot of hot oil, the recipe passes on what we know about internal temperatures and storage times. We offer that guidance sincerely. Putting it into practice is your job: buy fresh, cook meat and poultry until it is properly done in the centre, and bin whatever looks, smells or feels off.
We also advise against the shortcuts that make frying oil hazardous. Do not keep heating it past the point where it smokes, do not blend leftover oil into fresh batch after batch, and do not leave used oil sitting uncovered or in a warm corner.
Not health or diet advice
Nothing published here is meant as medical, dietary or nutritional counsel. Calorie figures are deliberately missing, and no ingredient is described as a remedy or a preventive. When food allergies, intolerances or a diet-sensitive condition are part of your life, ask a qualified professional first and study every ingredient label closely.
Stories and maps of food
The background given for each dish comes from careful reading. Even so, much food lore travelled by word of mouth, so it can be thin, argued over or simply unproven. Whenever that is the case you will see it described as such.
